Description

  • Strawberry Spinach Salad blends sweet berries, greens, cheese, and nuts in a refreshing, healthy dish you’ll want to make again and again.

Ingredients

  • For the Balsamic Glaze:

    • 1 cup balsamic vinegar

    • 1/4 cup honey or brown sugar

    For the Salad:

    • 10 oz fresh baby spinach

    • 3 cups sliced strawberries (cleaned and hulled)

    • 1 cup blueberries

    • 1/3 cup crumbled feta cheese

    • 1 cup toasted pecans (some chopped)


Instructions

  • Make the Balsamic Glaze:
    In a small saucepan, combine the balsamic vinegar and honey (or brown sugar). Heat over medium until it begins to boil gently. Reduce the heat and let it simmer, stirring occasionally, for about 10 minutes or until the mixture thickens and reduces by half. Remove from heat and let it cool in a heat-safe bowl. The glaze will thicken as it cools and should lightly coat the back of a spoon.

  • Assemble the Salad:
    In a large mixing bowl, combine the baby spinach, sliced strawberries, blueberries, and crumbled feta. Toss gently to mix.

  • Serve:
    Portion the salad into individual bowls. Sprinkle each serving with a mix of whole and chopped toasted pecans. Finish with a generous drizzle of the cooled balsamic glaze over the top.
