Description

  • Summer Peach Balsamic Caprese Salad with peaches, mozzarella, basil, & balsamic. Fresh, fast, & perfect for sunny days. Ready in 15 minutes.

Ingredients

  • 3 medium ripe peaches, sliced

  • 2 medium tomatoes, chopped

  • 8 oz fresh mozzarella pearls

  • 4 cups spring mix greens

  • 1/4 cup sliced almonds, toasted

  • 1/4 cup fresh basil, minced

  • 1/4 cup balsamic vinegar

  • 1 tablespoon honey or agave nectar

  • 1 teaspoon Dijon mustard

  • 1/4 cup olive oil

  • Salt and black pepper, to taste


Instructions

  • In a large bowl, combine the sliced peaches, chopped tomatoes, mozzarella pearls, spring greens, toasted almonds, and minced basil.

  • In a separate small bowl, whisk together the balsamic vinegar, honey or agave, and Dijon mustard.

  • Slowly drizzle in the olive oil while whisking continuously until the dressing is smooth and emulsified.

  • Season the dressing with salt and pepper to your liking.

  • Pour the dressing over the salad and gently toss everything together until well coated.

  • Serve immediately as a fresh side dish or light main.
