  • 4 ears of corn, cooked and kernels removed

  • 2 ripe peaches, sliced or diced

  • ¼ cup finely chopped red onion

  • 3 tablespoons chopped fresh cilantro

  • 1 medium jalapeño, deseeded and finely chopped

  • 12 large avocados, diced

  • 3 tablespoons fresh lime juice

  • 3 teaspoons honey

  • Salt and freshly ground black pepper, to taste


Instructions

  • Prepare the Corn: Cook the corn using your preferred method—boiling, grilling, or steaming. Let it cool, then slice the kernels off the cob and place them in a large mixing bowl.

  • Make the Vinaigrette: In a small bowl, whisk together lime juice and honey until the honey is fully dissolved. Add freshly ground black pepper to taste.

  • Combine Ingredients: Add the chopped peaches, red onion, cilantro, and jalapeño to the bowl with the corn. Pour the vinaigrette over the mixture and toss gently until everything is evenly coated. Season with salt and toss again.

  • Chill the Salad: Cover the salad and refrigerate for 10 to 20 minutes to allow the flavors to meld.
