    • 2 medium onions, diced
    • 2 leeks (white and light green parts only), sliced
    • 2 garlic cloves, minced
    • 2 pounds sweet potatoes, peeled and chopped into chunks
    • 1 tablespoon ground cumin
    • 5 cups low-sodium vegetable broth
    • 1 1/2 teaspoons kosher salt
    • 1 teaspoon black pepper
    • 1/3 cup cream or a bit of extra butter

Optional Garnishes:

    • Olive oil, cream, yogurt, or sour cream for drizzling
    • Crunchy toppings like baked flatbread strips, croutons, pepitas, or crispy shallots


Instructions

  • Heat the olive oil and butter in a large heavy-bottomed pot over medium heat. Add onions, leeks, and garlic, and cook for about 5 minutes until softened.
  • Add sweet potatoes and cumin. Stir and cook for 3 more minutes.
  • Pour in the vegetable broth, salt, and pepper. Bring to a gentle simmer and cook uncovered for 20 minutes, or until sweet potatoes are very tender.
  • Remove from heat. Use an immersion blender to puree the soup until smooth. Stir in the cream or extra butter.
  • Serve hot with your choice of garnish, such as a drizzle of yogurt and a sprinkle of crunchy toppings.
