- 2 medium onions, diced
- 2 leeks (white and light green parts only), sliced
- 2 garlic cloves, minced
- 2 pounds sweet potatoes, peeled and chopped into chunks
- 1 tablespoon ground cumin
- 5 cups low-sodium vegetable broth
- 1 1/2 teaspoons kosher salt
- 1 teaspoon black pepper
- 1/3 cup cream or a bit of extra butter

Instructions
- Heat the olive oil and butter in a large heavy-bottomed pot over medium heat. Add onions, leeks, and garlic, and cook for about 5 minutes until softened.
- Add sweet potatoes and cumin. Stir and cook for 3 more minutes.
- Pour in the vegetable broth, salt, and pepper. Bring to a gentle simmer and cook uncovered for 20 minutes, or until sweet potatoes are very tender.
- Remove from heat. Use an immersion blender to puree the soup until smooth. Stir in the cream or extra butter.
- Serve hot with your choice of garnish, such as a drizzle of yogurt and a sprinkle of crunchy toppings.
