Ingredients

    • 1 cup bulgur wheat, rinsed and drained

    • 1 (14 oz) can chickpeas, drained and rinsed

    • 23 small cucumbers, diced

    • ½ small red onion, finely chopped

    • ½ cup fresh parsley, chopped

    • ½ cup fresh mint, chopped

    • ½ cup shelled roasted pistachios, roughly chopped

    • ½ cup crumbled feta cheese

For the Lemon Vinaigrette:

    • Juice of ½ lemon

    • ½ cup extra-virgin olive oil

    • 1 teaspoon Dijon mustard

    • Salt and black pepper, to taste


Instructions

  • Cook bulgur according to the package directions. Fluff with a fork and allow it to cool completely.

  • In a large mixing bowl, combine the cooled bulgur, chickpeas, diced cucumbers, red onion, parsley, mint, pistachios, and feta.

  • For the dressing, mix lemon juice, olive oil, mustard, salt, and pepper in a jar. Shake vigorously until well blended.
