1 cup bulgur wheat, rinsed and drained

1 (14 oz) can chickpeas, drained and rinsed

2–3 small cucumbers, diced

½ small red onion, finely chopped

½ cup fresh parsley, chopped

½ cup fresh mint, chopped

½ cup shelled roasted pistachios, roughly chopped

½ cup crumbled feta cheese

For the Lemon Vinaigrette:

Juice of ½ lemon

½ cup extra-virgin olive oil

1 teaspoon Dijon mustard

Salt and black pepper, to taste

Instructions

Cook bulgur according to the package directions. Fluff with a fork and allow it to cool completely.

In a large mixing bowl, combine the cooled bulgur, chickpeas, diced cucumbers, red onion, parsley, mint, pistachios, and feta.

For the dressing, mix lemon juice, olive oil, mustard, salt, and pepper in a jar. Shake vigorously until well blended.
