  • The Perfect Kale Caesar Salad blends bold flavors, garlic dressing, and lacinato kale for a healthy, crave-worthy twist on the classic Caesar.

Ingredients

  • For the Salad:

    • 3 tablespoons olive oil

    • 2 cloves garlic, smashed

    • 1 cup panko breadcrumbs

    • 2 bunches lacinato kale, washed, dried, and stems removed

    • Salt and freshly ground black pepper, to taste

    For the Dressing:

    • 1/2 cup mayonnaise (or vegan mayo if preferred)

    • 1 tablespoon Dijon mustard

    • 1 teaspoon soy sauce or extra Worcestershire sauce

    • 3 tablespoons lemon juice

    • 3 large garlic cloves

    • 1 tablespoon minced capers (anchovy alternative)

    • 1/2 cup freshly grated Parmesan cheese (plus more for topping)

    • Freshly cracked black pepper, to taste


Instructions

  • Toast the Breadcrumbs:
    Heat olive oil in a sauté pan over medium heat. Add smashed garlic cloves and cook until fragrant. Add panko breadcrumbs and a pinch of salt. Stir frequently for 5–10 minutes until golden brown. Remove garlic cloves and let breadcrumbs cool.

  • Prepare the Dressing:
    In a blender or food processor, combine mayonnaise, mustard, soy sauce or Worcestershire, lemon juice, garlic, capers, Parmesan cheese, and black pepper. Blend until creamy and smooth.

  • Prep the Kale:
    Remove the tough stems from the kale leaves. Stack the leaves, roll them tightly, and slice into fine ribbons.

  • Massage the Kale:
    Place chopped kale in a large bowl. Add about one-third of the dressing and massage into the leaves using clean hands or gloves until kale softens.

  • Assemble the Salad:
    Add half of the toasted breadcrumbs and a few grinds of black pepper. Toss well.

  • Serve:
    Divide among bowls, topping with extra Parmesan cheese and remaining breadcrumbs.
