Ingredients

For the Salad:

3 tablespoons olive oil

2 cloves garlic, smashed

1 cup panko breadcrumbs

2 bunches lacinato kale, washed, dried, and stems removed

Salt and freshly ground black pepper, to taste
For the Dressing:

1/2 cup mayonnaise (or vegan mayo if preferred)

1 tablespoon Dijon mustard

1 teaspoon soy sauce or extra Worcestershire sauce

3 tablespoons lemon juice

3 large garlic cloves
-
1 tablespoon minced capers (anchovy alternative)

1/2 cup freshly grated Parmesan cheese (plus more for topping)

Freshly cracked black pepper, to taste

Instructions

Toast the Breadcrumbs:
Heat olive oil in a sauté pan over medium heat. Add smashed garlic cloves and cook until fragrant. Add panko breadcrumbs and a pinch of salt. Stir frequently for 5–10 minutes until golden brown. Remove garlic cloves and let breadcrumbs cool. -
Prepare the Dressing:
In a blender or food processor, combine mayonnaise, mustard, soy sauce or Worcestershire, lemon juice, garlic, capers, Parmesan cheese, and black pepper. Blend until creamy and smooth. -
Prep the Kale:
Remove the tough stems from the kale leaves. Stack the leaves, roll them tightly, and slice into fine ribbons. -
Massage the Kale:
Place chopped kale in a large bowl. Add about one-third of the dressing and massage into the leaves using clean hands or gloves until kale softens. -
Assemble the Salad:
Add half of the toasted breadcrumbs and a few grinds of black pepper. Toss well. -
Serve:
Divide among bowls, topping with extra Parmesan cheese and remaining breadcrumbs.
