Ingredients

  • Tropical Dressing:

    • 1/3 cup mayonnaise

    • 1/4 cup passion fruit pulp (from 1–2 passion fruits)

    • 1 teaspoon sugar

    • 1 teaspoon lime juice

    Bowl Ingredients:

    • 2 cups cooked sushi rice

    • 1/3 cup cooked and cooled edamame beans

    • 1/2 cup thinly sliced red cabbage

    • 1/3 cup pickled cucumber slices

    • 4 (6-ounce) portions marinated tuna

    • 6 tablespoons tropical dressing (see above)

    • 1/2 cup chopped roasted peanuts


Instructions

  • Make the Tropical Dressing:Slice the passion fruits in half and scoop out the pulp, including seeds. In a small bowl, mix the mayonnaise, passion fruit pulp, sugar, and lime juice. Taste and adjust the lime juice to your preferred tartness.Prepare the Rice Bowl Ingredients:Cook sushi rice as directed on the package. While the rice is cooking, toss the sliced red cabbage with 2 tablespoons of the prepared tropical dressing and set aside.Assemble the Bowls:Evenly divide the sushi rice into two serving bowls. Arrange the red cabbage, edamame, pickled cucumber, and marinated tuna over the rice. Drizzle each bowl with the remaining tropical dressing and sprinkle with chopped roasted peanuts.
