Turkey Chili Mac Made Easy for Busy Weeknights

Description

A creamy one-pot turkey chili mac made with lean ground turkey, whole grain pasta, beans, and cheddar cheese. Perfect for busy weeknights.


Ingredients

1 pound ground turkey

1 medium onion, finely diced

2 tablespoons chili powder

1½ teaspoons salt

1 teaspoon minced garlic

1 (19-ounce) can kidney beans, rinsed and drained

1¾ cups tomato sauce

3½ cups low-sodium vegetable or poultry broth

3 cups whole grain elbow macaroni, dry

½ cup milk

2 cups shredded cheddar cheese


Instructions

1. Heat a large skillet or deep pot over medium-high heat. Add the ground turkey and cook, breaking it up, until browned and cooked through.

2. Add the diced onion, chili powder, salt, and garlic. Cook for 4–5 minutes until softened.

3. Stir in kidney beans, tomato sauce, and broth. Bring to a simmer.

4. Add macaroni, cover, and cook 10–15 minutes, stirring often.

5. Stir in milk and cheese until creamy. Serve warm.

Notes

Stir frequently while cooking pasta to prevent sticking. Add extra broth if needed.
