Turkey Taco Nacho Skillet – The Ultimate One-Pan Dinner

Description

A flavorful one-pan turkey taco skillet topped with melted cheddar, fresh pico, creamy guacamole, and crunchy tortilla chips for an easy weeknight dinner.


Ingredients

1 tablespoon olive oil

1 sweet onion, diced

1 bell pepper, diced

2 garlic cloves, minced

1 pound lean ground turkey

2 teaspoons ground cumin

2 teaspoons smoked paprika

1 teaspoon chili powder

1/2 teaspoon garlic powder

1/2 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon all-purpose flour

2/3 cup chicken broth

1 cup shredded cheddar cheese

1 cup shredded lettuce

Pickled onions, for serving

Crumbled Mexican-style cheese, for topping

Lime wedges, for serving

Tortilla chips, for serving

Quick Pico:

1 pint cherry tomatoes, quartered

1/2 sweet onion, diced

1/4 cup chopped fresh cilantro

Juice of 1/2 lime

Pinch of salt

Pinch of black pepper

Quick Guacamole:

1 avocado

2 tablespoons chopped fresh cilantro

Juice of 1 lime

Pinch of salt

Pinch of black pepper


Instructions

1. Heat olive oil in a large skillet over medium-low heat. Add the diced onion, bell pepper, and minced garlic with a small pinch of salt. Cook while stirring for about 5 minutes until softened.

2. Add the ground turkey to the skillet. Break it apart with a spoon while cooking. Season with cumin, smoked paprika, chili powder, garlic powder, salt, and black pepper. Continue cooking until the turkey is fully browned.

3. Sprinkle the flour over the turkey mixture and stir well so it coats evenly.

4. Pour in the chicken broth and stir. Let the mixture cook for a few minutes until it thickens slightly.

5. Sprinkle the shredded cheddar cheese over the top. Allow it to melt, covering the skillet briefly if needed.

6. Add shredded lettuce and pickled onions over the melted cheese.

7. Spoon the quick pico and guacamole on top. Finish with crumbled Mexican-style cheese if desired.
