Ingredients

  • 2 tablespoons olive oil
  • 2 medium onions, chopped
  • 8 ounces turkey or beef smoked sausage, sliced
  • 6 cloves garlic, minced
  • 2 cans (19 ounces each) cannellini beans, rinsed and drained
  • 4 cups low-sodium chicken or vegetable broth
  • 1/2 cup heavy cream
  • 1 teaspoon paprika (sweet or smoked)
  • 1 teaspoon fresh rosemary, chopped
  • 1/2 teaspoon fresh thyme, chopped
  • 2 bay leaves
  • Salt and black pepper, to taste


Instructions

  • Heat the olive oil in a large soup pot or Dutch oven over medium-high heat.
  • Add the chopped onions and sliced sausage. Sauté until onions are translucent and sausage is lightly browned, about 6-8 minutes.
  • Stir in the garlic and cook for 1 more minute until fragrant.
  • Add the cannellini beans, broth, heavy cream, paprika, rosemary, thyme, and bay leaves. Season with salt and pepper.
  • Bring the soup to a boil, then reduce heat and simmer uncovered for 20 minutes.
  • For a thicker texture, mash a portion of the beans or add an extra can. If too thick, add water to reach desired consistency.
  • Remove bay leaves before serving. Ladle into bowls and enjoy warm.
