Ingredients
- 2 tablespoons olive oil
- 2 medium onions, chopped
- 8 ounces turkey or beef smoked sausage, sliced
- 6 cloves garlic, minced
- 2 cans (19 ounces each) cannellini beans, rinsed and drained
- 4 cups low-sodium chicken or vegetable broth
- 1/2 cup heavy cream
- 1 teaspoon paprika (sweet or smoked)
- 1 teaspoon fresh rosemary, chopped
- 1/2 teaspoon fresh thyme, chopped
- 2 bay leaves
- Salt and black pepper, to taste
Instructions
- Heat the olive oil in a large soup pot or Dutch oven over medium-high heat.
- Add the chopped onions and sliced sausage. Sauté until onions are translucent and sausage is lightly browned, about 6-8 minutes.
- Stir in the garlic and cook for 1 more minute until fragrant.
- Add the cannellini beans, broth, heavy cream, paprika, rosemary, thyme, and bay leaves. Season with salt and pepper.
- Bring the soup to a boil, then reduce heat and simmer uncovered for 20 minutes.
- For a thicker texture, mash a portion of the beans or add an extra can. If too thick, add water to reach desired consistency.
- Remove bay leaves before serving. Ladle into bowls and enjoy warm.
