Description
Fresh Vietnamese lettuce wraps filled with shrimp, herbs, crisp vegetables, and vermicelli noodles, served with a creamy homemade peanut sauce.
Ingredients
10 oz cooked medium shrimp, peeled and deveined
2.5 oz dried vermicelli rice noodles
12 large or 16–20 small lettuce leaves
2 medium carrots, finely julienned
1 cup daikon radish, julienned
2 cups bean sprouts
2 cucumbers, julienned
2 cups fresh mint leaves
2 cups cilantro sprigs
3 small red chilies, thinly sliced (optional)
1/4 cup roasted peanuts, finely chopped
2 medium carrots, cut into thin matchsticks
1/2 large daikon radish, cut into thin matchsticks
1 1/2 cups hot water
1/2 cup granulated sugar
4 teaspoons salt
3/4 cup rice vinegar or apple cider vinegar
2 tablespoons natural peanut butter
2 tablespoons hoisin sauce
1–2 tablespoons fresh lime juice
1/3 cup light coconut milk
1 garlic clove, finely grated
1 teaspoon chili paste (optional)
1 teaspoon soy sauce
1 teaspoon sugar
1/2 teaspoon salt
Instructions
1. Prepare the pickled vegetables by mixing hot water, sugar, and salt until dissolved. Add vinegar and carrots and daikon. Let sit for 2 hours then drain.
2. Whisk together peanut butter, hoisin sauce, lime juice, coconut milk, garlic, chili paste, soy sauce, sugar, and salt until smooth to make the peanut sauce.
3. Soak rice vermicelli noodles in boiling water according to package directions until tender. Rinse with cold water and drain.
4. Slice cooked shrimp in half lengthwise and remove any remaining vein if needed.
5. Arrange lettuce leaves, noodles, shrimp, pickled vegetables, cucumbers, bean sprouts, herbs, and peanuts on a serving platter.
6. To assemble, place noodles in a lettuce leaf, add vegetables, shrimp, herbs, and drizzle with peanut sauce. Top with chopped peanuts and chilies if desired.
Notes
Adjust lime juice in the peanut sauce for a brighter flavor.
Butter lettuce or romaine works best for sturdy wraps.
All components can be prepared ahead and assembled just before serving.
