Ingredients

  • 5 cups cubed watermelon (from about 1 mini seedless watermelon)
  • 1 cup fresh blueberries
  • 3/4 cup crumbled feta cheese
  • 1/4 cup fresh basil, thinly sliced
  • 2 tablespoons fresh lime juice
  • 1 tablespoon honey
  • 1 tablespoon light olive oil
  • Salt, to taste
  • Black pepper, to taste


Instructions

  • In a small bowl, whisk together the lime juice, honey, and olive oil. Season with salt and black pepper to taste. Chill the vinaigrette while you prepare the salad.
  • In a large mixing bowl, combine the watermelon, blueberries, feta cheese, and fresh basil.
  • Drizzle your desired amount of the chilled vinaigrette over the salad. Gently toss until all the ingredients are evenly coated.
