Ingredients
- 5 cups cubed watermelon (from about 1 mini seedless watermelon)
- 1 cup fresh blueberries
- 3/4 cup crumbled feta cheese
- 1/4 cup fresh basil, thinly sliced
- 2 tablespoons fresh lime juice
- 1 tablespoon honey
- 1 tablespoon light olive oil
- Salt, to taste
- Black pepper, to taste
Instructions
- In a small bowl, whisk together the lime juice, honey, and olive oil. Season with salt and black pepper to taste. Chill the vinaigrette while you prepare the salad.
- In a large mixing bowl, combine the watermelon, blueberries, feta cheese, and fresh basil.
- Drizzle your desired amount of the chilled vinaigrette over the salad. Gently toss until all the ingredients are evenly coated.
- Serve immediately, garnished with additional feta and basil if desired. Alternatively, cover and refrigerate the salad until ready to serve.
