Ingredients

  • For the Dressing:

    • 1 tablespoon low-sodium soy sauce

    • 2 teaspoons fresh lime juice

    • 2 teaspoons rice vinegar

    • 1 small garlic clove, minced

    • 1/2 teaspoon fresh ginger, finely minced

    For the Salad:

    • 3 heirloom tomatoes, cut into wedges

    • 5 cups seedless watermelon, cut into 2-inch triangles

    • 1 small jalapeño, thinly sliced (adjust to taste)

    • 2 tablespoons chopped fresh Thai basil or sweet basil

    • 2 tablespoons toasted cashews, chopped

    • 1/2 avocado, diced

    • Sea salt, to taste

    • Lime wedges, for serving


Instructions

  • In a small bowl, whisk together the soy sauce, lime juice, rice vinegar, garlic, and ginger to make the dressing.

  • On a large platter or shallow serving bowl, layer the tomato wedges and watermelon pieces. Sprinkle the sliced jalapeño evenly across the top.

  • Drizzle the dressing over the salad ingredients.

  • Garnish with fresh basil, toasted cashews, and diced avocado.

  • Add sea salt to taste and serve with lime wedges on the side.
