Ingredients

  • 1 pound turkey or chicken sausage, casing removed

  • 1 tablespoon olive oil

  • 1 large onion, finely chopped

  • 3 garlic cloves, minced

  • 4 medium potatoes (Yukon Gold or Russet), peeled and cubed

  • 4 cups low-sodium chicken broth

  • 2 cups water

  • 1 teaspoon Italian seasoning

  • Salt and pepper, to taste

  • 2 cups chopped kale

  • 1 cup heavy cream

  • ½ teaspoon red pepper flakes (optional)

  • Grated Parmesan cheese, for garnish

  • Fresh chopped parsley, for garnish


Instructions

  • In a large pot, heat olive oil over medium-high heat. Add the sausage and cook until browned, crumbling it with a spoon. Remove sausage from the pot and set aside.

  • In the same pot, add the chopped onion. Sauté for about 5 minutes until soft and translucent. Add garlic and cook for another 1 to 2 minutes until fragrant.

  • Add cubed potatoes to the pot. Pour in the chicken broth and water. Stir in Italian seasoning, and season with salt and pepper. Bring to a boil, then lower the heat and let it simmer for about 20 minutes, or until potatoes are fork-tender.

  • Stir in chopped kale and cook for 5 minutes until wilted.

  • Return the cooked sausage to the pot. Pour in the heavy cream and stir to combine. Add red pepper flakes if using. Simmer gently until heated through.

  • Taste and adjust seasoning as needed. Serve hot, garnished with Parmesan cheese and parsley.
