Ingredients

1 pound turkey or chicken sausage, casing removed

1 tablespoon olive oil

1 large onion, finely chopped

3 garlic cloves, minced

4 medium potatoes (Yukon Gold or Russet), peeled and cubed

4 cups low-sodium chicken broth

2 cups water

1 teaspoon Italian seasoning

Salt and pepper, to taste

2 cups chopped kale
-
1 cup heavy cream
-
½ teaspoon red pepper flakes (optional)

Grated Parmesan cheese, for garnish

Fresh chopped parsley, for garnish
Instructions

In a large pot, heat olive oil over medium-high heat. Add the sausage and cook until browned, crumbling it with a spoon. Remove sausage from the pot and set aside.

In the same pot, add the chopped onion. Sauté for about 5 minutes until soft and translucent. Add garlic and cook for another 1 to 2 minutes until fragrant.

Add cubed potatoes to the pot. Pour in the chicken broth and water. Stir in Italian seasoning, and season with salt and pepper. Bring to a boil, then lower the heat and let it simmer for about 20 minutes, or until potatoes are fork-tender.

Stir in chopped kale and cook for 5 minutes until wilted.

Return the cooked sausage to the pot. Pour in the heavy cream and stir to combine. Add red pepper flakes if using. Simmer gently until heated through.

Taste and adjust seasoning as needed. Serve hot, garnished with Parmesan cheese and parsley.
